When life gets crazy, it can sometimes seems like meal planning is completely out of the picture. When looking through Pinterest, it can seem impossible to find easy recipes that don’t include 20 different ingredients. My schedule can be pretty crazy at times, and these recipes have saved me when I do not want to think of what to make for dinner.

Buffalo ranch chicken salad

This is a staple in my house! Get 2 large or 3 medium chicken breasts and put them in your crock pot. Pour about 12 ounces of buffalo sauce in the crock pot and a dry ranch mix. Cook on low for 8 hours or high for 4 hours. Shred the chicken after cooked. Add to a spinach salad with corn, cheese and  ranch. A healthy and easy alternative to wings.

Taco soup

This is a perfect recipe when trying to clean out your pantry. Pour a can of corn, black beans, red beans, pinto beans, two cans of Rotel, and diced tomatoes. Top with a packet of taco seasoning and 32 ounces of chicken broth. Add a pound of ground beef, and cook on low for 8 hours or high for 4 hours. Top with cheese or sour cream. 

BBQ chicken with broccoli and rice

Get 2 large or 3 medium chicken breasts and put them in your crock pot. Cover the chicken in BBQ sauce, and cook on low for 8 hours or high for 4 hours. Shred the chicken when cooked. Cook some minute rice, and steam some broccoli in the microwave. 

Chicken burrito bowls

Get 2 large or 3 medium chicken breasts and put them in your crock pot. Pour an entire jar of salsa over the chicken as well as a can of corn and black beans. Cook on low for 8 hours or high for 4 hours. Once cooked, shred the chicken. Cook some minute rice, and then make your bowl with your chicken, beans, and corn. Feel free to add avocado, cheese and/or sour cream!

Salad with sandwich meat

Sometimes, you just don’t have time to cook meat. Grab some salad, cut up some sandwich meat, boil an egg, throw in some cheese and dressing. A super easy salad that requires little effort. 

Soft tacos

Being a 5th generation Texan, tortillas are a must have in my house. Cook a pound of ground beef in the skillet and add a packet of dry taco seasoning. Heat up the tortillas, and put sour cream, cheese, your cooked meat and salsa. 

Hawaiian chicken and rice

Put 2 large or 3 mediums sized chicken breasts in a crock pot. Top with a generous amount of BBQ sauce and a can of crushed pineapple. Cook on low for 8 hours or high for 4 hours. Shred the chicken when cooked, and serve on a bed of rice.
