Holidays are busy and filled with wonderful meals with loved ones. That being said, prepping for holiday events can be hectic. Here are a few cookie recipes that are perfect for the Christmas season that are easy to make, but taste amazing. 

The Shortbread Cookie

Shortbread is a classic cookie around the holidays, and rightly so. The sweet buttery flavor is a staple of any dessert table. 

Ingredients: 

      • 2 cups all-purpose flour

      • ½ cup brown sugar 

      • 1 cup cold butter 

Instructions: 

      • Preheat oven to 325 degrees

      • Cream the butter and brown sugar. Add 1 ½ – 1 2/3 cup of flour to the mix. 

      • The dough should start to form. If the dough is too dry, add a teaspoon of water.  If the dough is too runny, add a teaspoon of flour. 

      • Sprinkle board with flour to keep dough from sticking. Knead for five minutes. 

      • Roll dough into spherical shape and cut into ½ disk. 

      • Place approximately one inch apart on an ungreased baking sheet. 

      • Bake at 325 degrees for 20 minutes. 

The Classic Chocolate Chip Cookie

Classic cookie for any time of year. No explanation needed. This recipe is a variation of the Nestle classic chocolate chip cookie recipe found here. 

Ingredients: 

      • 2 ¼ cup of all purpose flour 

      • 1 teaspoon of baking soda

      • 1 teaspoon salt

      • 1 cup softened butter

      • 1 ½ cups brown sugar

      • 1 teaspoon vanilla extract

      • 2 eggs

      • 2 cups chocolate chips

Instructions: 

      • Preheat oven to 375 degrees. 

      • Combine flour, baking soda, and salt. 

      • Mix butter, sugar, and vanilla. 

      • Add eggs. 

      • Add flour in small increments. 

      • Once the ingredients are well mixed, add in chocolate chips

      • Drop onto ungreased baking sheet. Bake for approximately 10 minutes or until bottoms are lightly browned. 

The Butter Pecan Cake Mix Cookies

When I think of semi-homemade, this recipe comes to mind. Butter pecan cake mix cookies taste like a decadent pecan cookie without the hassle. 

Ingredients 

      • 1 box of butter pecan cake mix 

      • 1 small package of instant vanilla pudding mix 

      • 1 cup cooking oil 

      • 1 egg

      • 1 cup chopped nuts 

Instructions: 

      • Preheat oven to 325 degrees. 

      • Mix cake mix, pudding mix, and pecans. 

      • Add oil and egg. Mix until well combined. 

      • Drop by teaspoons onto an ungreased baking sheet. 

      • Bake at 325 degrees for approximately 9-11 minutes or until bottoms are lightly browned. 

Bonus: The Blondie

This blondie recipe is nearly impossible to mess up. Blondies are great for a last minute pot luck or quick gift. Here, you can customize the recipe for any event. 

Ingredients: 

      • 2 cups brown sugar

      • 2 cups self rising flour 

      • 2 eggs 

      • 2 sticks of melted butter

      • ¼ teaspoon of vanilla extract

      • 2 cups of nuts (optional) 

      • ½ cup of chocolate chips (optional) 

Instructions: 

      • Preheat oven to 325 degrees. 

      • Melt butter

      • Mix butter, brown sugar, flour, eggs, and vanilla flavoring. 

      • Add nuts or chocolate chips. 

      • Grease a 9×13 pan 

      • Spread mixture evenly into pan. 

      • Bake for 25 minutes.
